What’s on the Menu? Lavender-honey Iced Coffee

Having iced coffee in the afternoon during the warm weather season is my favorite mini daily indulgence. This season, I’m changing my iced coffee up a little bit.  I like my coffee sweetened, and instead of my usual one pack of raw sugar, I’m switching to lavender-infused honey.  Who knew honey would work well with coffee?  I wouldn’t have guessed, but luckily I visited Rebel Dog Coffee Company, a specialty coffee shop in Connecticut, where I discovered that lavender honey in iced coffee is delicious.   I love anything with lavender, so when I saw this offering on their specialty menu I had to try it.

I have a Nespresso Vertuo line coffee machine and I love their espresso coffee capsules.  These make great tasting cappuccinos, as well as iced coffee.  There are many other espresso machines at various price points out there and the Nespresso machine works best for me.  Use whatever you have at home.

Directions:

Brew coffee, using Nespresso espresso capsule.  If use double shot (Scuro or Chiaro), run the capsule once.  If use single shot (Diavolitto or Altissio) for lighter flavor, run the same capsule twice (to get the volume that we need).

Add lavender honey to hot coffee, 1 tsp to 1 tbs, depending on how sweet you like it.  You can use store bought lavender-infused honey. 

Optional: You can make your own lavender infusion using various methods you can find on the web.  For 1-2 servings, I make a quick infusion using 1 tsp dried, food grade lavender flowers in 2 tbs honey and microwave it for 20-30 sec.  Let it sit for 5-10 min.  Then, strain the honey.  I like a strong lavender taste, so making my own infusion works well.  I find that the store-bought version has a lighter lavender flavor, but that probably depends on which brand you get.

Add ice cubes.  I use 4 traditional size ice cubes.

Add 1/4 to 1/3 cup milk of your choice. I use 2% lactose-free milk.
