What’s on the Menu? Oatmeal Chocolate Chip Pecan Cookies

For our last lunch with the three of us for the summer, Stacey made oatmeal chocolate chip pecan cookies for dessert.  These cookies are so scrumptious.  I’m normally a plain chocolate chip cookie kind of gal, but these oatmeal cookies drove me nuts.  With the recipe below, at least I don’t have to wait until the end of summer when Stacey returns to enjoy them again!

 

Stacey’s Oatmeal Chocolate Chip Pecan Cookies:

Ingredients:

1 stick of butter plus 6 tbsp

¾ cup brown sugar

½ cup sugar

2 eggs

1 tsp vanilla

1 ½ cup flour

1 tsp baking soda

1 tsp cinnamon

½ tsp salt

3 cups oats

1 cup chocolate chips

1 cup chopped pecans

Directions:

Preheat oven to 350.

In a large bowl, beat butter and sugar on medium until combined.  Add eggs and vanilla and beat well.

In a bowl, combine flour, baking soda, salt, and cinnamon.

Combine dry and wet ingredients.

Add oats, chocolate chips and pecans, mix well.

Scoop rounded tablespoon onto parchment paper cookie sheet and bake 8-10 minutes.
