What's on the Menu? Peach Lavender Jam

One of my favorite ways to punctuate the end of summer is to make some seasonal fruit jam.  This year, I was inspired by a simple French recipe to make peach lavender jam.  As peaches are still abundant at many local farmers’ markets and grocery stores, I decided it was a good time to attempt this recipe.  I also love anything with lavender! 

I bought my peaches from the local grocery store which sells produce from our local farms.  This jam recipe has been adapted and contains only natural ingredients.  The final product is delicious; I particularly enjoy it on a piece of French bread with butter.  The jam is also delightful when serving with a piece of cheese as an appetizer.

Ingredients:

6 lbs Peaches (ripe)

1 Lemon

2 cups Granulated sugar

2 tbs Lavender flowers, dried

¼ cup water

Directions:

Peel, wash, and slice peaches (discard pits).  Put sliced peaches into a large pan. 

Add 2 cups of sugar, ¼ cup water, and 2 tbs dried lavender flowers.

Juice one lemon and add juice to mixture.

Bring the mixture to a boil.  Then, simmer with constant stirring.  Use a potato masher to mash the peaches.  Do not let bottom of pan burn.

Continue with simmering and stirring until it reaches the consistency you like.  I prefer a thicker consistency, which takes about 2 hours of simmering and stirring.

Sterilize mason jars.  Directions to sterilize can be found online.

Scoop jam into jars. Once jam cools, close jars.

This recipe yields 4 x 8 oz jars.
