What's on the Menu? The Gift of Special Food Preparation

A huge benefit of having a college kid at home is he can share in the cooking duties.  While my kid doesn’t share in the daily dinner prep as much as I would like, when he does cook, he cooks to impress!  I benefited from terrific meals for my birthday and Mother’s Day – think risotto with scallops.  And, check out what he made as the first course for Christmas Dinner - homemade ravioli!  He even got his brothers involved in the preparation by having them help roll out the dough and cut the ravioli.  He adapted an online recipe, which involved roasting and crushing pecans to include with ricotta as the filling. He finished the dish with a brown butter sauce. Then, he took the extra time to plate the ravioli beautifully, which made it taste even better.  I can get used to this kind of meal, but alas, looks like it will be saved for special occasions, which will preserve the impressiveness of the experience for longer, so that works for me!
